Chicken & Mushroom Stir Fry

This chicken and mushroom stir fry is not only incredibly flavoursome but is also a quick and easy stir fry to make!

Ingredients

  • 300g Chicken thigh
  • 2 spring onion
  • 200g fresh mushrooms (assorted or any variety)
  • a thumb-size piece of ginger

The Marinade

  • 1 ½ tbsp light soy sauce
  • 1 tsp sesame oil
  • ½ tbsp corn flour
  • 2 pinches of sugar

The Sauce

  • 1 ½ tbsp oyster sauce
  • 2 tbsp rice wine
  • 2 tablespoons/ 2 capfuls of Shaoxing Rice Wine
  • 1 tsp sugar
  • 30ml hot water (or a generous splash)
  • Pinch of sugar

Method

1. Mix the marinade ingredients together. Add the marinade to your chicken, then add your cornflour, massage well and set aside for approximately 15 minutes.

2. Slice your mushrooms, chop your ginger and spring onion.

3. Mix up your sauce ingredients and set aside.
