Delicious Yaki Udon

Thick Japanese udon noodles, succulent chicken and a flavour-packed rich sauce to bring it all together? This classic Yaki Udon dish is one you’ll want to make again and again.

Ingredients

  • 500 g udon noodles
  • 250g chicken thighs
  • 1 carrot
  • ¼ cabbage
  • ½ onion
  • 1 spring onion
  • 1 1/2 tablespoons vegetable oil

Sauce

  • 1 tablespoon sesame oil
  • 1 tabletablespoon Japanese sake (or dry sherry)
  • 3 tablespoons light soy sauce
  • 4 tablespoons tonkatsu sauce
  • 2 tablespoons mirin
  • 2 teaspoons sugar

Garnish

  • 1 tablespoon toasted sesame seeds, plus more for serving

Method

1. Slice the carrot and onion into fine matchsticks, shred the cabbage and slice the chicken into 3cm-wide strips.

2. Mix all the sauce ingredients together in a small bowl or ramekin.

BUILD YOUR WOK CLOCK: place your sliced onion at 12 o’clock, then arrange the spring onions, carrots, chicken bowl, cabbage, noodles and sauce clockwise around your plate.
