Filipino Roasted Pork Belly (Lechon Liempo)

This Filipino Lechon Leimpo is the best pork you will ever have.

Ingredients

  • 2 - 2.5kg boneless, rind-on pork belly 
  • 4 stalks lemongrass, bruised
  • 1 red onion, finely sliced 
  • 8 spring onions
  • 2 tbsp white vinegar
  • Kitchen twine 

For the marinade

  • 5 cloves garlic, finely chopped
  • 2 tsp salt
  • 2 tsp sugar  
  • 2 tsp black pepper 
  • 1 tbsp white vinegar

Method

Preheat oven to 175˚C. 

Make slits in the meat-side of the pork belly, then spread on the marinade and massage well into meat. Evenly distribute the red onion slices, lemongrass stalks, and spring onions over the centre of the belly. Roll up the belly, and secure with kitchen twine to secure the filling inside.
