Haddock With Soy And Ginger

Tender haddock infused with the flavors of soy and ginger.

Ingredients

  • 2 fillets haddock boned and skinned, or a sustainable alternative firm white fish like coley
  • 200ml light soy sauce
  • ¼ thumb ginger, peeled and finely chopped
  • 2 tsp lime juice
  • 1 spring onion, finely sliced
  • 1 tbsp coriander, finely chopped

Method

1. Mix together the soy, ginger, lime juice, spring onion and coriander in a baking dish.

2. Marinade the fish in the soy mix, turning to coat well, then cover with cling film and refrigerate for up to 2 hours.

3. Ten minutes before ready to bake, take the fish out of the fridge and bring up to room temperature.
