Mayak Eggs ( Korean Marinated Eggs)

Ingredients

  • 1 pack instant noodles
  • 300ml chicken stock
  • 12 Eggs

The Marinade

  • 3 cloves of garlic, finely chopped
  • 2 spring onions, roughly chopped
  • 1 thumb-sized piece of ginger
  • 1 Korean Green chilli chopped
  • ½ Red chili chopped
  • 1 tsp of salt
  • 1 tbsp Japanese rice vinegar
  • ½ tbsp of Sesame Seeds
  • 150ml light soy sauce
  • 100ml dark soy sauce
  • 100ml water
  • 3 tbsp honey
  • ½ tsp sesame oil

Method

Boil the eggs until medium/ soft. Using this takes 6 minutes of simmering.  When the eggs are ready, remove and let them rest in a bowl of ice water for at least 10 minutes. Then crack the egg shells carefully, being careful not to peel them, but rather to create little cracks all over the shells. Set them aside.
