Pad Thai

Ingredients

  • 150g rice noodles
  • 1 small red chilli chopped
  • 1 spring onion shredded
  • Small handful of Chinese chives, cut into finger length pieces
  • 1 clove of garlic chopped
  • 2 tbsp of tamarind paste
  • 2 tbsp of fish sauce
  • 2 tbsp of lime juice
  • 4 tsp sugar
  • 2 tbsp kecap manis
  • 1 tbsp oil
  • 1 egg
  • 8 large prawns
  • 50g firm tofu – thinly sliced
  • 45g bean sprouts
  • Chopped roasted peanuts
  • Lime wedges and chopped coriander for garnish

Method

1. Soak the noodles in warm water for 10 minutes then drain and leave to dry

2. Finely chop the chilli and garlic, then gradually blend in the tamarind, sugar, fish sauce, kecap manis and lime juice and mix together
