500g chicken thighs (boneless or bone-in, skin-on optional), cut in half
1 thumb-sized piece of ginger, sliced
2 spring onions, cut into rough chunks
5-6 tbsp dark soy sauce
2 tbsp palm sugar (or Chinese rock sugar/brown sugar)
3-4 tbsp Shaoxing rice wine
1.5-2 tbsp light soy sauce
1 cup chicken stock (or water)
- 1-2 tbsp oil for frying
