Ingredients

  • 2 Tbsp vegetable oil
  • 7 slices ginger
  • 2 spring onions
  • 3 star anise
  • 100 ml Shaoxing wine
  • 4 tbsp light soy sauce
  • 6 tbsp dark soy sauce
  • 5-6 tbsp sugar or honey
  • 1-1.5L chicken stock
  • 8 boneless skinless chicken thighs

Method

Roughly chop the ginger and spring onions. Add the oil to a heavy based wok or pan. Add the ginger and spring onion and allow to cook for 30 seconds.
