Ingredients

  • 500g pork (shoulder/thigh/belly/lean) plus 1 kg pork bones for the stock

  • 6-7 cloves of garlic, pounded into a paste in a mortar and pestle

  • Suggested herbs: mint, perilla, coriander, Thai basil, sawtooth coriander

  • 300g bean sprouts

The Braising Liquid

  • 3 tbsp light soy sauce

  • 2 tbsp dark soy sauce

  • 1 tsp five spice powder

  • 2 tbsp

  • sugar

  • White pepper

The Stock

  • 2L chicken stock

  • ½ tsp ground pepper

  • 1 tsp salt

  • 1 peeled onion

  • 1 kg Cao Lau (or Soba Noodles)
